  • 2 pounds beef chuck roast or stew meat, cubed
  • 3 tablespoons vegetable oil
  • 1/2 cup red grape juice
  • 4 cups low-sodium beef broth
  • 3 large potatoes, peeled and cubed
  • 4 carrots, cut into 1-inch pieces
  • 4 stalks celery, cut into 1-inch pieces
  • 1 large onion, chopped
  • salt and black pepper, to season
  • 12 teaspoons Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 2 teaspoons cornstarch
  • 2 teaspoons cold water

Instructions

  1. Season beef cubes with salt and black pepper.
  2. Heat vegetable oil in a Dutch oven over medium-high heat. Sear beef in batches until browned; remove and set aside.
  3. Deglaze the pot with red grape juice, scraping up browned bits.
  4. Add beef broth and return seared beef to the pot along with seasonings.
  5. Bring to boil, reduce heat, cover, and simmer for 1 hour.
  6. Prepare vegetables while simmering: cube potatoes and chop carrots, celery, and onion.
  7. Combine cornstarch with cold water until smooth.
  8. After an hour, add vegetables and cornstarch slurry to the pot; stir well.
  9. Cover and simmer for another hour until meat is tender and vegetables are cooked through.
  10. Taste and adjust seasonings before serving hot.
