Ingredients
- 1 lb. chicken tenders
- 3 tablespoons minced garlic
- 2 tablespoons olive oil
- 1 stick butter (1/2 cup)
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 3/4 cup white grape juice
- 1 1/2 cups white rice (uncooked)
- 2 3/4 cups low sodium chicken stock
- 1/2 cup Parmesan cheese (grated)
- Fresh parsley (for garnish)
Instructions
- Season chicken tenders with cajun seasoning on both sides. Heat olive oil in a skillet over medium-high heat.
- Cook chicken for 3 minutes per side until golden brown, then reduce heat to low.
- Add 2 tablespoons of butter and one tablespoon of garlic to the skillet; sauté until fragrant.
- Remove chicken, cover, and set aside. In the same skillet, add remaining butter and garlic; sauté before adding grape juice.
- Simmer for about 3-5 minutes. Add rice to the skillet and toast for about 5 minutes while stirring.
- Pour in chicken stock, salt, and red pepper flakes; bring to a boil then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
- Stir in parmesan cheese and return the chicken to the pan; drizzle with a mixture of melted butter, garlic, reserved pan juices, and parsley.
