  • 4 boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream or whole milk
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper and sear for 4–5 minutes on each side until golden brown. Remove from the skillet and set aside.
  2. In the same skillet, melt butter over medium heat. Sauté chopped onion for 2–3 minutes until soft; add minced garlic and cook for an additional 30 seconds. Stir in rice and toast for 1–2 minutes.
  3. In a mixing bowl, whisk together cream of chicken soup, sour cream, garlic powder, onion powder, thyme, paprika, and cayenne until smooth.
  4. Pour in chicken broth and heavy cream; stir in the sauce mixture until combined. Add diced chicken back to the skillet.
  5. Cover and simmer on low heat for 20–25 minutes until rice is tender and liquid is absorbed.
