Ingredients
- 1 tbsp olive oil
- 1 onion (diced)
- 2 garlic cloves
- 1 tbsp tomato paste
- 1 tsp coarsely ground black pepper
- 1 tsp smoked paprika
- 2 ½ cups beef broth
- 1.5 pounds lean ground beef
- 4 tbsp ketchup
- 2 tbsp yellow mustard
- 1 ½ cup orzo
- 2 tbsp chopped parsley
- 1 ½ cup shredded cheddar cheese
Instructions
- Heat olive oil in a large nonstick skillet over medium heat. Add diced onions and minced garlic, cooking until fragrant (about 2 minutes). Stir in tomato paste and cook for an additional minute.
- Add black pepper and smoked paprika to the skillet, deglazing with ½ cup of beef broth while scraping up any bits.
- Incorporate lean ground beef, breaking it up as you cook until no longer pink (about 3 minutes). Mix in ketchup and mustard.
- Stir in orzo and remaining beef broth; bring to a boil. Reduce heat to low and let simmer for 10–15 minutes until orzo is al dente, stirring frequently.
- Remove from heat and stir in chopped parsley and shredded cheddar cheese. Adjust seasoning if needed before serving.
