  • 20 ounces cheese tortellini (refrigerated)
  • 1 pound ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • ½ teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 10 ounces canned diced tomatoes (drained)
  • 2 ½ cups beef broth
  • ¼ cup heavy cream
  • 1 ½ cups shredded cheddar cheese or cheese blend
  • 2 tablespoons freshly chopped parsley

Instructions

  1. In a large oven-safe skillet, brown the ground beef over medium-high heat. Drain excess grease if necessary.
  2. Add diced onion and minced garlic to the skillet; cook until softened.
  3. Stir in salt, pepper, and Italian seasoning to combine.
  4. Add cheese tortellini, diced tomatoes, and beef broth. Bring to a boil, then cover and simmer for about 5 minutes until tortellini is tender.
  5. Remove from heat; stir in heavy cream and half of the cheese. Top with remaining cheese.
  6. Broil in the oven for a few minutes until bubbly and golden brown.
  7. Garnish with chopped parsley before serving.
