- Salt and pepper, to taste
- 10 sheets filo dough, thawed
- 2 tablespoons unsalted butter, melted
- Olive oil spray (for extra crispiness)
For the Chili Honey:
- 1/4 cup honey
- 1 tablespoon chili flakes (adjust for heat)
- 1/2 teaspoon lemon juice
Instructions
Step 1: Prepare the Feta Filling In a bowl, mix together the crumbled feta cheese, ricotta (if using), dried oregano, garlic powder, salt, and pepper until well combined.
Step 2: Prepare the Filo Dough Lay one sheet of filo dough on a clean surface and brush it lightly with melted butter. Place another sheet of filo dough on top and brush it with butter as well. Repeat this step until you have stacked 3 sheets of filo dough (brushing each layer with butter as you go).
Step 3: Assemble the Feta Rolls Cut the layered filo dough into strips (about 3-4 inches wide). Place a tablespoon of the feta mixture at one end of each strip. Roll the filo dough around the feta filling to form a tight roll, folding in the sides as you go to seal the ends. Place the rolled feta on a baking sheet lined with parchment paper.
Step 4: Bake the Feta Rolls Brush the tops of the rolls with more melted butter and lightly spray with olive oil for extra crispiness. Bake the feta rolls in a preheated 375°F (190°C) oven for 12-15 minutes, or until golden brown and crispy.
