  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cups mushrooms (cleaned and quartered)
  • 1 large zucchini (cut into half circles)
  • 3 minced garlic cloves
  • 1 teaspoon minced ginger

Instructions

  1. Marinate 1 pound of thinly sliced chicken breast in a mixture of 2 tablespoons light soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, and 2 tablespoons cornstarch for at least 20 minutes.
  2. In a small bowl, prepare the sauce by mixing together 1/2 cup water, 1/4 cup light soy sauce, 2 tablespoons oyster sauce, 1 tablespoon rice vinegar, 2 teaspoons brown sugar, and 1 tablespoon cornstarch.
  3. Heat 2 tablespoons vegetable oil in a large skillet over high heat. Add the marinated chicken and cook until browned (about 5-7 minutes). Remove from skillet.
  4. In the same skillet, stir-fry 2 cups quartered mushrooms and 1 large zucchini (cut into half circles) for about 2-3 minutes.
  5. Return the chicken to the skillet along with minced garlic and ginger; cook for an additional minute.
  6. Pour the prepared sauce into the skillet, mix well until thickened (about another minute), then serve immediately.
