Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined (tail on or off, your choice)
  • 1 sourdough baguette, sliced diagonally into 1-inch thick pieces
  • ½ cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • ½ cup shredded mozzarella cheese (optional for extra gooeyness)
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • 1 teaspoon lemon zest (optional, for a burst of freshness)
  • ½ teaspoon red pepper flakes (optional, for a spicy kick)
  • Salt and black pepper, to taste
  • Olive oil spray or brushing oil (for toasting the bread)

Instructions

Step 1: Prepare the Sourdough Base

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  2. Toast the Sourdough Slices:

    • Arrange the sourdough slices on a baking sheet.
    • Lightly spray or brush each slice with olive oil.
    • Toast in the oven for about 5 minutes until golden and crispy.
    • Set aside.

Step 2: Cook the Shrimp

  1. Season the Shrimp:

    • In a mixing bowl, toss the shrimp with salt, black pepper, and red pepper flakes (if using).
  2. Sauté the Shrimp:

    • In a large skillet over medium heat, melt 2 tablespoons of the butter.
    • Add the minced garlic and sauté until fragrant (about 30 seconds).
    • Add the shrimp and cook for 2-3 minutes per side until pink and fully cooked.
    • Squeeze in lemon zest for a pop of freshness (optional).
    • Remove from heat and set aside.

Step 3: Make the Cheesy Topping

  1. Combine the Ingredients:

    • In a bowl, mix the remaining melted butter, grated Parmesan cheese, shredded mozzarella (if using), and chopped parsley.
  2. Spread the Topping:

    • Spoon the cheese mixture evenly over each toasted sourdough slice.

Step 4: Assemble and Bake

  1. Add the Shrimp:

    • Place 2-3 cooked shrimp on top of each cheesy sourdough slice.
  2. Bake to Perfection:

    • Return the baking sheet to the oven and bake for about 5-7 minutes until the cheese is melted and bubbly.
    • For an extra golden finish, broil for an additional 1-2 minutes, watching closely to avoid burning.

Step 5: Garnish and Serve

  1. Garnish:

    • Sprinkle additional Parmesan cheese and chopped fresh parsley on top for a vibrant presentation.
  2. Serve and Enjoy:

    • Serve warm as an appetizer, lunch, or light dinner.
    • Pair with a fresh salad, garlic aioli, or lemon wedges for an extra burst of flavor!

Notes

C

  • Use Fresh Sourdough: The tangy flavor and crispy texture of sourdough perfectly complement the rich, cheesy shrimp topping.
  • Don’t Overcook the Shrimp: Keep an eye on the shrimp as they cook quickly and can become rubbery if overcooked.
  • Add Extra Flavor: For a more robust flavor, try adding a sprinkle of Italian seasoning or smoked paprika.
  • Cheese Options: Feel free to mix in other cheeses like Asiago or Gruyere for a more complex flavor profile.
