  • 8 cherry tomatoes, halved
  • 1 Tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1 Tbsp tomato paste
  • 1/4 tsp ground cumin
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic and halved cherry tomatoes; cook for another minute.
  3. Add lentils, ground cumin, tomato paste, broth, salt, and pepper to the pot. Mix well.
  4. Bring the mixture to a simmer. Cover and reduce heat to medium-low; cook for about 20-25 minutes until lentils are tender.
  5. Taste and adjust seasoning as needed.
  6. Stir in short pasta shapes, cooking gently until al dente.
  7. If too thick, add more broth or water until desired consistency is achieved.
