  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 3 tablespoons unsalted butter (melted)
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the peach filling by cooking cubed peaches with sugar, lemon juice, cornstarch, and water in a saucepan until thickened.
  2. Mix dough ingredients including water, bread flour, instant yeast, sugar, salt, milk, cream, egg, and vanilla in a large bowl until a soft dough forms.
  3. Knead the dough on a floured surface until smooth and let it rise until doubled in size.
  4. Roll out the dough into a rectangle and spread the peach filling evenly over it.
  5. Prepare the crumb topping by mixing softened butter, brown sugar, cinnamon, and flour until crumbly; sprinkle over the peach filling.
  6. Roll up the dough tightly into a log shape and slice into equal pieces. Place them in a greased baking pan and let rise again.
  7. Bake at 350°F (175°C) for about 30 minutes until golden brown.
  8. Drizzle with cream cheese glaze after cooling slightly.
