Ingredients

Scale
  • 1/4 cup softened or melted butter
  • 84 ounces canned sliced peaches, drained (328 oz cans)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup cold cubed butter

Instructions

  1. Preheat your oven to 375°F.
  2. Grease a 9×13 inch baking dish with the softened or melted butter.
  3. In a large bowl, mix together the granulated sugar, brown sugar, flour, cinnamon, and salt. Stir in lemon juice, orange zest, and vanilla extract before gently folding in the drained peaches. Pour this mixture into the prepared baking dish and bake for 15 minutes.
  4. While the peaches are baking, combine lemon juice and milk in a small bowl; let sit for at least five minutes. In a food processor, pulse together flour, granulated sugar, and baking powder before adding cold butter cubes until crumbly.
  5. Whisk the milk mixture with vanilla extract and add it to the food processor; pulse until just moistened.
  6. Once peaches are baked, distribute the topping over them and return to the oven for an additional 40 minutes or until golden.
