Ingredients

  • Flat iron steak (or skirt, sirloin, or ribeye), sliced
  • Bell peppers (green, yellow, red)
  • Onion
  • Soy sauce
  • Brown sugar
  • Mexican melting cheese
  • Large tortillas
  • Avocado oil

Instructions

  1. Cook chopped bell peppers and onion on a griddle until translucent (about 10 minutes), then set aside.
  2. Season steak with salt, pepper, and garlic, cooking on the griddle for 6-8 minutes until browned.
  3. In a mixing bowl, combine soy sauce, brown sugar, and other sauce ingredients; stir until well mixed.
  4. Add cooked vegetables back to the griddle with steak and pour in the sauce; cook until caramelized.
  5. Clean the griddle surface and add avocado oil to prepare for quesadillas.
