Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup baking cocoa
- 1/4 cup instant coffee granules
- 1 1/4 cups sour cream
- 2 eggs, room temperature, lightly beaten
- 1/3 cup butter, melted
- 1 cup white chocolate peppermint baking chips
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick baking spray.
- In a medium bowl, whisk together flour, baking soda, salt, sugar, and cocoa; set aside.
- In a stand mixer bowl, combine sour cream, eggs, and melted butter. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture; mix until combined.
- Gently fold in white chocolate peppermint baking chips and chocolate chips.
- Pour the batter into the prepared loaf pan. Optionally top with crushed peppermint.
- Bake for 50-55 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
