Ingredients
- ¾ cup plus 1 tbsp. all-purpose flour
- 1/3 cup cocoa powder
- 4 tsp. instant espresso powder
- 1 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- ¼ cup granulated sugar
- 1 tbsp. brown sugar
- ¼ cup Greek yogurt
- ¼ cup plus 2 tbsp. milk (I used whole)
- 1 egg
- 1 tsp. vanilla extract
- 1 tbsp. unsalted butter (melted and cooled slightly)
- 1 ½ cups powdered sugar
- 2 tbsp. milk
- ¼ tsp. peppermint extract
- 2 tbsp. crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together all-purpose flour, cocoa powder, instant espresso powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
- In another bowl, mix Greek yogurt, milk, egg, vanilla extract, and melted butter until smooth.
- Combine the wet mixture with the dry ingredients and fold gently until just combined.
- Fill a greased donut pan two-thirds full with the batter.
- Bake for about 10 minutes or until a toothpick comes out clean.
- While cooling, whisk together powdered sugar, milk, and peppermint extract for the glaze.
- Once cooled, dip each donut into the glaze and sprinkle with crushed peppermint candies before serving.
