  • ¾ cup plus 1 tbsp. all-purpose flour
  • 1/3 cup cocoa powder
  • 4 tsp. instant espresso powder
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¼ cup granulated sugar
  • 1 tbsp. brown sugar
  • ¼ cup Greek yogurt
  • ¼ cup plus 2 tbsp. milk (I used whole)
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tbsp. unsalted butter (melted and cooled slightly)
  • 1 ½ cups powdered sugar
  • 2 tbsp. milk
  • ¼ tsp. peppermint extract
  • 2 tbsp. crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together all-purpose flour, cocoa powder, instant espresso powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
  3. In another bowl, mix Greek yogurt, milk, egg, vanilla extract, and melted butter until smooth.
  4. Combine the wet mixture with the dry ingredients and fold gently until just combined.
  5. Fill a greased donut pan two-thirds full with the batter.
  6. Bake for about 10 minutes or until a toothpick comes out clean.
  7. While cooling, whisk together powdered sugar, milk, and peppermint extract for the glaze.
  8. Once cooled, dip each donut into the glaze and sprinkle with crushed peppermint candies before serving.
