Ingredients

  • 2 cups long grain white rice
  • 1 ½ tablespoons olive oil
  • ¾ cup chopped onion
  • 2 cloves garlic (minced)
  • 2 ½ cups water or low sodium chicken broth
  • 1 teaspoon salt
  • 1 ½ teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 8 ounces tomato sauce
  • Chopped fresh cilantro (optional)

Instructions

  1. Rinse the rice under cold running water using a fine mesh strainer until the water runs clear. Drain thoroughly.
  2. In the Instant Pot, heat olive oil using the Saute function. Add chopped onion and sauté for about 3 minutes until softened.
  3. Stir in minced garlic and cook for another 30 seconds before turning off the Saute function.
  4. Pour in water or chicken broth and scrape any bits from the bottom of the pot. Add salt, chili powder, cumin, garlic powder, oregano, tomato sauce, and rinsed rice; stir to combine.
  5. Securely close the lid and set to pressure cook on high for 4 minutes.
  6. Allow natural pressure release for 15 minutes before switching to venting to release any remaining steam.
  7. Fluff the rice gently with a fork and serve warm topped with fresh cilantro if desired.
