Ingredients
- 2 cups long grain white rice
- 1 ½ tablespoons olive oil
- ¾ cup chopped onion
- 2 cloves garlic (minced)
- 2 ½ cups water or low sodium chicken broth
- 1 teaspoon salt
- 1 ½ teaspoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- 8 ounces tomato sauce
- Chopped fresh cilantro (optional)
Instructions
- Rinse the rice under cold running water using a fine mesh strainer until the water runs clear. Drain thoroughly.
- In the Instant Pot, heat olive oil using the Saute function. Add chopped onion and sauté for about 3 minutes until softened.
- Stir in minced garlic and cook for another 30 seconds before turning off the Saute function.
- Pour in water or chicken broth and scrape any bits from the bottom of the pot. Add salt, chili powder, cumin, garlic powder, oregano, tomato sauce, and rinsed rice; stir to combine.
- Securely close the lid and set to pressure cook on high for 4 minutes.
- Allow natural pressure release for 15 minutes before switching to venting to release any remaining steam.
- Fluff the rice gently with a fork and serve warm topped with fresh cilantro if desired.
