Ingredients
For the Meatloaf:

1 ½ lbs ground beef (or ground turkey)

1 small green bell pepper, finely chopped

1 small onion, finely chopped

1 tbsp olive oil

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper

1 tsp Worcestershire sauce

2 tsp Dijon mustard

½ cup breadcrumbs

1 large egg
-
1 cup shredded provolone cheese (or mozzarella)
For the Topping:

4 slices provolone cheese

Optional: sautéed onions and bell peppers for garnish
Instructions
Step 1: Preheat and Prep

Preheat your oven to 375°F (190°C).

Line a loaf pan or baking sheet with parchment paper or lightly grease it.
Step 2: Sauté the Veggies

In a skillet, heat olive oil over medium heat.

Add chopped onion and bell pepper, cooking until softened (about 5 minutes).

Stir in garlic and cook for 30 more seconds. Remove from heat and let cool slightly.
Step 3: Mix the Meatloaf

In a large bowl, combine ground beef, sautéed veggies, salt, pepper, Worcestershire sauce, Dijon mustard, breadcrumbs, egg, and shredded cheese.

Step 4: Shape and Bake
