For the Meatloaf:

  • 1 ½ lbs ground beef (or ground turkey)

  • 1 small green bell pepper, finely chopped

  • 1 small onion, finely chopped

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp Worcestershire sauce

  • 2 tsp Dijon mustard

  • ½ cup breadcrumbs

  • 1 large egg

  • 1 cup shredded provolone cheese (or mozzarella)

For the Topping:

  • 4 slices provolone cheese

  • Optional: sautéed onions and bell peppers for garnish


Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375°F (190°C).

  2. Line a loaf pan or baking sheet with parchment paper or lightly grease it.

Step 2: Sauté the Veggies

  1. In a skillet, heat olive oil over medium heat.

  2. Add chopped onion and bell pepper, cooking until softened (about 5 minutes).

  3. Stir in garlic and cook for 30 more seconds. Remove from heat and let cool slightly.

Step 3: Mix the Meatloaf

  1. In a large bowl, combine ground beef, sautéed veggies, salt, pepper, Worcestershire sauce, Dijon mustard, breadcrumbs, egg, and shredded cheese.

  2. Mix gently with your hands or a spoon until just combined (don’t overmix).

Step 4: Shape and Bake

  1. Transfer the mixture to a loaf pan or form a loaf on the prepared baking sheet.

  2. Bake for 35–40 minutes, or until the internal temperature reaches 160°F (71°C).

Step 5: Add the Cheese Topping

  1. Remove meatloaf from the oven and top with provolone slices.

  2. Return to the oven for 5–7 more minutes, until cheese is melted and bubbly.

  3. Let rest for 5–10 minutes before slicing.

Step 6: Slice and Serve

  1. Slice with a sharp knife and serve hot.

  2. Optional: top with extra sautéed peppers and onions for the full Philly cheesesteak effect.

Notes

Use 80/20 Ground Beef – Just enough fat to keep the meatloaf moist.
Don’t Overmix – Overworking the mixture can make it dense.
Rest Before Slicing – Keeps the juices locked in.
