Ingredients
- 2 Tbsp vegetable oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 large yellow onion, thinly sliced
- 2 tsp minced garlic
- 16 oz shaved beef
- ½ tsp kosher salt
- ½ tsp black pepper
- 2 cups Egg Beaters® Original
- ½ cup grated Parmesan cheese
- ½ cup shredded provolone cheese
- 1 cup sliced green onions
Instructions
- Heat 1 tbsp vegetable oil in a non-stick skillet over medium heat. Add the red and green bell peppers, yellow onion, and garlic; sauté for about 5-7 minutes until soft. Remove from skillet.
- In the same skillet, add another tbsp of oil if needed and cook the shaved beef seasoned with salt and pepper until browned (about 4-5 minutes). Set aside.
- In a bowl, whisk together Egg Beaters®, kosher salt, black pepper, and grated Parmesan cheese.
- Pour half of the egg mixture into a clean non-stick skillet over medium heat. Cook until edges set but center is slightly runny.
- Add half of the sautéed veggies and cooked beef on one side; sprinkle with shredded provolone cheese.
- Fold the omelet in half using a spatula and cook for another minute until cheese melts completely.
- Slide onto a plate, garnish with green onions if desired, and repeat for the remaining egg mixture.
