  • 2 Tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 tsp minced garlic
  • 16 oz shaved beef
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 2 cups Egg Beaters® Original
  • ½ cup grated Parmesan cheese
  • ½ cup shredded provolone cheese
  • 1 cup sliced green onions

Instructions

  1. Heat 1 tbsp vegetable oil in a non-stick skillet over medium heat. Add the red and green bell peppers, yellow onion, and garlic; sauté for about 5-7 minutes until soft. Remove from skillet.
  2. In the same skillet, add another tbsp of oil if needed and cook the shaved beef seasoned with salt and pepper until browned (about 4-5 minutes). Set aside.
  3. In a bowl, whisk together Egg Beaters®, kosher salt, black pepper, and grated Parmesan cheese.
  4. Pour half of the egg mixture into a clean non-stick skillet over medium heat. Cook until edges set but center is slightly runny.
  5. Add half of the sautéed veggies and cooked beef on one side; sprinkle with shredded provolone cheese.
  6. Fold the omelet in half using a spatula and cook for another minute until cheese melts completely.
  7. Slide onto a plate, garnish with green onions if desired, and repeat for the remaining egg mixture.
