- 1 1/2 lb top sirloin or ribeye (cut into thin slices)

- 1/2–1 cup sliced mushrooms
- 1–2 sweet bell peppers (thinly sliced)
- 4 cups beef broth
- 12 slices provolone cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp Worcestershire sauce
- 4 tbsp flour
Instructions
- In a large bowl, toss the beef slices with salt and pepper. Coat with 2 tablespoons of flour.
- Sear the beef in batches over medium-high heat for 1–2 minutes per side until browned. Set aside.
- In the same skillet, cook onions and mushrooms until translucent. Add garlic powder, remaining flour, Worcestershire sauce, and seasonings.
- Gradually stir in the beef broth; allow it to thicken before simmering for about 30 minutes.
- Add sweet bell peppers in the last 10 minutes of cooking along with the seared beef.
- Serve hot in bowls topped with melted provolone cheese.
