  • 1 1/2 lb top sirloin or ribeye (cut into thin slices)
  • 2 onions (quartered and sliced)
  • 1/21 cup sliced mushrooms
  • 12 sweet bell peppers (thinly sliced)
  • 4 cups beef broth
  • 12 slices provolone cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp Worcestershire sauce
  • 4 tbsp flour

Instructions

  1. In a large bowl, toss the beef slices with salt and pepper. Coat with 2 tablespoons of flour.
  2. Sear the beef in batches over medium-high heat for 1–2 minutes per side until browned. Set aside.
  3. In the same skillet, cook onions and mushrooms until translucent. Add garlic powder, remaining flour, Worcestershire sauce, and seasonings.
  4. Gradually stir in the beef broth; allow it to thicken before simmering for about 30 minutes.
  5. Add sweet bell peppers in the last 10 minutes of cooking along with the seared beef.
  6. Serve hot in bowls topped with melted provolone cheese.
