For the Fries:

  • 1 (28 oz) bag frozen French fries or crinkle fries

  • Salt to taste

  • Cooking spray or oil (for baking or air frying)

For the Steak Topping:

  • 1 lb shaved ribeye or thinly sliced sirloin

  • 1 tbsp olive oil

  • 1 green bell pepper, sliced

  • 1 small onion, sliced

  • 1 tsp garlic powder

  • Salt and black pepper to taste

For the Cheese Sauce:

  • 2 tbsp unsalted butter

  • 2 tbsp all-purpose flour

  • 1 cup whole milk

  • 1 cup shredded provolone cheese

  • ½ cup shredded mozzarella (for extra meltiness)

  • Salt and pepper to taste

Optional Toppings:

  • Chopped fresh parsley

  • Pickled jalapeños

  • Hot sauce or ketchup


Instructions

Step 1: Cook the Fries
Bake or air fry the frozen French fries according to package directions until golden and crispy.
Sprinkle with salt while hot and set aside.

Step 2: Sauté the Steak and Veggies
Heat olive oil in a skillet over medium-high heat.
Add sliced onions and bell peppers. Sauté for 5–6 minutes until softened.
Push veggies to the side and add shaved steak.
Season with garlic powder, salt, and pepper.
Cook for 3–4 minutes until browned and cooked through, mixing everything together.
Remove from heat.

Step 3: Make the Cheese Sauce
In a small saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute to make a roux.
Gradually whisk in milk until smooth.
Stir in provolone and mozzarella until melted and creamy.
Season with salt and pepper to taste. Remove from heat.

Step 4: Assemble the Cheese Fries
Place hot fries on a serving platter or large skillet.
Top with steak and veggie mixture.
Drizzle generously with cheese sauce.
Garnish with parsley, jalapeños, or hot sauce if desired.

Step 5: Serve & Enjoy
Serve immediately while everything is hot and melty.
