  • ¼ cup diced pimento peppers
  • 4 Tbsp cream cheese (room temperature)
  • ¼ cup mayonnaise
  • ½ Tbsp lemon juice
  • ½ Tbsp chopped fresh chives
  • 3 Tbsp unsalted butter (softened)
  • 8 slices Texas toast bread or thick-sliced rustic bread

Instructions

  1. In a mixing bowl, combine shredded sharp cheddar, diced pimento peppers, cream cheese, mayonnaise, lemon juice, chopped chives, kosher salt, and black pepper. Mix until creamy.
  2. Spread softened butter on one side of each slice of bread.
  3. On the unbuttered side of four slices, spread an even layer of the pimento cheese mixture. Top with another slice of bread, ensuring the buttered side is facing out.
  4. Heat a non-stick skillet over medium heat and place the sandwiches in the skillet once hot. Grill each side for about 3-4 minutes until golden brown and crispy.
  5. Remove from heat, let cool slightly before slicing in half, and serve warm.
