  • 15 oz fresh pineapple or 20 oz canned in juice
  • 2 large eggs
  • 1 ¼ cup sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • Zest and juice of 1 lime or lemon
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon fine salt

Instructions

  1. Preheat your oven to 355°F/180°C and line a spring-form cake pan with parchment paper.
  2. Core and peel the pineapple. Dice half and slice the other half; set aside.
  3. In a stand mixer, beat eggs and sugar until fluffy (3-4 minutes). Gradually add oil, sour cream, vanilla, lime juice, and zest.
  4. Mix in flour, baking powder, and salt until just combined.
  5. Pour half the batter into the prepared pan and layer with diced pineapple. Top with remaining batter and arrange sliced pineapple on top.
  6. Bake for about 40 minutes or until a toothpick comes out clean. Cool for ten minutes before transferring to a serving plate.
