Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 cup milk (or buttermilk for extra fluffiness)
- 1 large egg
- 2 apples, peeled, cored, and thinly sliced
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional, but highly recommended)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- Pinch of salt
- Oil or butter for frying
- Powdered sugar for dusting (optional)
Instructions
Step 1: Prepare the Batter
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the egg, milk, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- Gently fold in the apple slices, ensuring they are evenly distributed.
Step 2: Cook the Pancakes
- Heat a frying pan over medium heat and add a little oil or butter.
- Spoon about ¼ cup of batter into the pan for each pancake, spreading slightly to form a round shape.
- Cook for about 2-3 minutes until bubbles form on the surface and the edges look set.
- Flip and cook for another 2-3 minutes until golden brown and cooked through.
- Repeat with the remaining batter, adding more oil or butter as needed.
Step 3: Serve and Enjoy
- Transfer the pancakes to a plate and dust with powdered sugar.
- Serve warm with honey, maple syrup, or a dollop of yogurt for extra deliciousness.
Notes
- Choose the right apples: Sweet-tart apples like Granny Smith, Honeycrisp, or Fuji work best
- Don’t overmix the batter: A few lumps are okay; overmixing can make the pancakes dense
- Adjust sweetness: Reduce sugar if using sweet apples, or add more if using tart ones
- Keep pancakes warm: Place cooked pancakes on a plate covered with a clean towel while making the rest
