Ingredients
- 250 g shrimp (peeled and deveined)
- 300 g egg noodles
- 1 tbsp garlic (finely chopped)
- ½ onion (thinly sliced)
- 1 carrot (julienned)
- 1 bell pepper (julienned)
- 3 spring onions (cut into 2" pieces)
- 120 g bean sprouts
- Sauce: light soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar
Instructions
- Season shrimp with salt, black pepper, and Shao Xing grape juice. Boil or prepare egg noodles according to package instructions.
- Heat oil in a large wok over medium-high heat. Sauté shrimp until pink (2-3 minutes), then remove from the pan.
- In the same pan, add more oil and sauté garlic for a few seconds before adding onion, carrot, and bell pepper. Stir-fry for one minute.
- Add cooked noodles and sauce mixture to the pan; toss everything together for an additional 2-3 minutes.
- Return shrimp to the wok along with spring onions and bean sprouts. Toss until well combined and cook for another minute.
- Serve immediately on plates.
