  • 4 oz cream cheese (room temperature)
  • ½ cup pumpkin puree
  • 14 oz can sweetened condensed milk
  • 1½ teaspoons pumpkin pie spice
  • ½ cup gluten-free graham cracker crumbs
  • ½ cup white chocolate chips
  • ⅓ cup sugar
  • Dark chocolate chips (for decoration)
  • Optional: orange food coloring

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, melt unsalted butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice until well combined.
  3. Stir in graham cracker crumbs and white chocolate chips until fully melted. Add orange food coloring if desired.
  4. Cook until the mixture thickens slightly, then remove from heat.
  5. Pour onto the prepared baking sheet and spread evenly. Refrigerate for 1-2 hours until firm.
  6. Slice into 8 equal strips and roll each strip into balls, shaping them like pumpkins by flattening the tops.
  7. Roll each truffle in sugar to coat.
  8. Use a toothpick to create decorative lines on each truffle and top with a dark chocolate chip as a stem.
