Description

  • 425g pumpkin puree
  • 2 1/4 tsp active dry yeast
  • 150g whole milk (lukewarm)
  • 4 Tbsp brown sugar
  • 565g all-purpose flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground cardamom
  • 2 eggs (lightly beaten)
  • 120g unsalted butter (room temperature)
  • For the filling: unsalted butter, brown sugar, reduced pumpkin puree, ground cinnamon, ground cardamom
  • For the icing: cream cheese, butter, powdered sugar, maple syrup, espresso powder

Instructions

  1. In a bowl, mix lukewarm milk with yeast; let sit until frothy.
  2. In a stand mixer bowl, combine flour, brown sugar, salt, spices, pumpkin puree, eggs, and vanilla. Add yeast mixture and knead with a dough hook while incorporating softened butter until smooth.
  3. Transfer to a greased bowl and let rise for about an hour.
  4. Mix filling ingredients until smooth while dough rises.
  5. Roll out risen dough into a rectangle; spread filling evenly.
  6. Roll tightly into a log shape; cut into pieces.
  7. Place rolls on a parchment-lined baking sheet; let rise for another 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake for 25–30 minutes until golden.
  9. Prepare icing by mixing cream cheese and butter; gradually add remaining ingredients until smooth.
  10. Drizzle icing over warm rolls before serving.
