  • 1/4 cup milk
  • 3/4 cup all-purpose flour (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1/4 cup brown sugar (for topping)
  • 1 teaspoon pumpkin pie spice (for topping)
  • 6 Tablespoons unsalted butter, melted (for topping)
  • 1 and 1/2 cups confectioners' sugar (for icing)
  • 2 Tablespoons pure maple syrup (for icing)
  • 2 Tablespoons milk (for icing)

Instructions

  1. Preheat oven to 425°F (218°C) and prepare muffin pans.
  2. In one bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In another bowl, mix canola oil, sugars, pumpkin puree, eggs, and milk until well combined; fold into dry ingredients.
  4. Fill muffin liners with batter nearly to the top.
  5. For the topping, combine additional flour, sugars, and melted butter until crumbly; sprinkle over batter.
  6. Bake for 5 minutes at high temperature then reduce to 350°F (177°C) for another 16–17 minutes. Cool slightly before icing.
