  • 1 large egg (at room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin or pumpkin puree
  • 1¼ cups powdered sugar (for glaze)
  • 3 tablespoons pure maple syrup (for glaze)
  • 1 tablespoon dark corn syrup (for glaze)
  • ½ tablespoon water (for glaze)
  • ¼ teaspoon ground cinnamon (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your mini donut pan.
  2. In a medium bowl, whisk together all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, combine the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Gently mix the wet ingredients into the dry ingredients to form a thick batter.
  5. Transfer the batter into a piping bag and fill each cavity of the greased donut pan halfway.
  6. Bake for about 6-7 minutes or until a toothpick comes out clean.
  7. Allow the donuts to cool on a wire rack.
  8. For the glaze, whisk powdered sugar, maple syrup, dark corn syrup, water, and ground cinnamon until smooth. Dip each donut top into the glaze and let it set on the rack.
