  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup melted butter (cooled)
  • 1 cup sugar
  • 3/4 cup packed brown sugar
  • 1 egg yolk (room temperature)
  • 2 tsp vanilla extract
  • 1 cup pumpkin puree (excess moisture blotted)
  • 2 cups butterscotch chips (divided)

Instructions

  1. In a large bowl, combine old-fashioned oats, all-purpose flour, baking soda, cinnamon, and pumpkin pie spice.
  2. In another large bowl, whisk together melted butter, sugar, brown sugar, egg yolk, vanilla extract, and pumpkin puree until smooth.
  3. Gradually add the wet mixture to the dry ingredients and stir until just combined; avoid overmixing.
  4. Gently fold in 1 1/2 cups of butterscotch chips.
  5. Drop tablespoonfuls of cookie dough onto parchment-lined baking sheets and slightly flatten each cookie.
  6. Decorate each cookie with the remaining butterscotch chips by placing a few on top.
  7. Bake at 350°F for 13-15 minutes until edges are golden while centers remain soft.
  8. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to wire racks.
