  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream
  • 1 cup pure pumpkin (pumpkin puree)
  • 1/2 cup powdered sugar
  • 12 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with papers.
  2. In a bowl, mix together flour, brown sugar, granulated sugar, and cinnamon for the streusel topping. Add melted butter until crumbly.
  3. In another bowl, whisk together flour, spices, baking powder, baking soda, and salt for the muffin batter.
  4. In a separate bowl, combine vegetable oil, sugars, eggs, vanilla extract, sour cream, and pumpkin until smooth.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
