  • ½ Yellow Onion (diced)
  • 1 Red Bell Pepper (cut into strips)
  • 1 Green Bell Pepper (cut into strips)
  • 1 Orange Bell Pepper (cut into strips)
  • 1 Packet Fajita Seasoning
  • 2 cups Minute Rice
  • 2 cups Chicken Broth
  • 8 ounces Tomato Sauce
  • Gordos Cheese Dip

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add diced onions and bell peppers, stirring for about 2-3 minutes until softened.
  2. Add diced chicken to the skillet and sprinkle with fajita seasoning. Cook for approximately 7-8 minutes until the chicken is fully cooked.
  3. Stir in minute rice, tomato sauce, and chicken broth. Bring to a simmer.
  4. Allow to simmer for about 2 minutes before removing from heat; let sit covered to absorb flavors.
  5. Top with Gordos Cheese Dip before serving hot.
