  • 23 large boneless skinless chicken breasts (diced)
  • 1 packet taco seasoning
  • 1 box Spanish rice
  • Chicken broth
  • 2 cups salsa
  • ½ cup queso cheese dip
  • 10 ounces Rotel tomatoes (undrained)
  • ½ cup yellow onion (diced)
  • 1 bell pepper (diced)

Instructions

  1. Preheat your oven to 400°F.
  2. Dice chicken into 1-inch pieces and coat with taco seasoning in a large bowl.
  3. In an oven-safe skillet, combine Spanish rice, chicken broth, Rotel tomatoes, diced bell peppers, and onions. Mix well.
  4. Place the seasoned chicken on top of the rice mixture.
  5. Cover with aluminum foil and bake for 50–60 minutes. Remove the foil for the last 10–15 minutes until most liquid is absorbed.
  6. Stir the mixture gently before drizzling warm queso dip on top.
