Ingredients
- 2 cups all-purpose flour – The base of the dough.
- 1 teaspoon baking powder – Helps the rolls rise and stay fluffy.
- ½ teaspoon baking soda – Works with the baking powder for a perfect rise.
- ½ teaspoon salt – Enhances flavor.
- 1 cup cottage cheese – Adds moisture and a slight tang.
- 1 egg – Binds the dough and adds richness.
- 2 tablespoons melted butter – For extra softness and flavor.
- ¼ cup milk – Adjusts dough consistency.
- 1 teaspoon sugar – Balances the flavors.
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
In another bowl, whisk the cottage cheese, egg, melted butter, and milk until smooth.
Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms. If the dough is too sticky, add a little more flour, a tablespoon at a time.
Using your hands, shape the dough into small balls (about the size of a golf ball) and place them on the prepared baking sheet, spacing them slightly apart.
Bake for 18-20 minutes or until the rolls are golden brown on top.
Let the rolls cool slightly before serving. Enjoy warm with butter, jam, or even a drizzle of honey!
Notes
✔ Don’t Overmix – Mix just until the ingredients come together to keep the rolls light and fluffy.
✔ Use Small Curd Cottage Cheese – It blends better into the dough.
✔ Add Herbs or Cheese – Mix in some dried herbs or grated cheese for extra flavor.
✔ Brush with Butter – For a golden, shiny finish, brush the rolls with melted butter right after baking.
