Ingredients

For the Chicken & Marinade:
2 lbs boneless, skinless chicken breasts or thighs, cut into 1½-inch cubes
1 packet (1 oz) ranch seasoning mix
½ cup plain Greek yogurt or sour cream
2 tbsp olive oil
1 tbsp lemon juice
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
¼ tsp paprika (optional, for color)

For Assembly:
10-12 wooden or metal skewers (soaked in water if wooden)
Chopped parsley or chives (for garnish)

Optional Add-Ons:
Cherry tomatoes
Bell pepper chunks
Red onion pieces
Zucchini slices


Instructions

Step 1: Prepare the Marinade
In a large mixing bowl, combine Greek yogurt (or sour cream), olive oil, lemon juice, ranch seasoning, garlic powder, onion powder, black pepper, and paprika.
Whisk until smooth and well blended.

Step 2: Marinate the Chicken
Add the cubed chicken to the marinade and toss to coat evenly.
Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

Step 3: Assemble the Skewers
Thread the marinated chicken onto skewers, alternating with optional veggies if using.
Leave a little space between each piece to ensure even cooking.

Step 4: Grill or Bake

To Grill:
Preheat grill to medium-high heat (about 400°F).
Place skewers on the grill and cook for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Internal temperature should reach 165°F.

To Bake:
Preheat oven to 425°F.
Place skewers on a foil-lined baking sheet.
Bake for 20–25 minutes, flipping halfway, until golden and fully cooked.

Step 5: Garnish & Serve
Remove skewers from heat and let rest for a few minutes.
Sprinkle with fresh chopped parsley or chives before serving.

Notes

Soak Wooden Skewers – Prevent burning by soaking in water for 30 minutes.
Marinate Longer – More time in the marinade means more flavor.
Even Pieces – Cut chicken into uniform sizes for even cooking.
