For the Vegetables:

  • 1 lb baby red or Yukon gold potatoes, halved

  • 12 oz fresh green beans, trimmed

  • 2 tbsp olive oil

  • 1 packet ranch seasoning mix (about 1 oz)

  • ½ tsp garlic powder (optional)

  • Salt and black pepper to taste

Optional Add-ins:

  • ¼ cup grated Parmesan cheese (for a cheesy twist)

  • 1 tbsp lemon juice or zest (adds a bright touch)

  • Pinch of crushed red pepper flakes (for heat)

  • 2 tbsp chopped fresh parsley or chives (for garnish)


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper or spray lightly with oil.

Step 2: Prepare the Potatoes

  1. In a mixing bowl, toss halved baby potatoes with 1 tablespoon of olive oil.

  2. Add half of the ranch seasoning and garlic powder.

  3. Spread the potatoes in a single layer on the sheet pan, cut side down.

  4. Roast for 20 minutes.

Step 3: Add the Green Beans

  1. While the potatoes are roasting, toss the green beans with the remaining 1 tablespoon of olive oil and ranch seasoning.

  2. After the potatoes have roasted for 20 minutes, remove the pan from the oven.

  3. Push the potatoes to one side and add the green beans to the empty space.

  4. Return to the oven and roast for another 15–20 minutes, until the potatoes are crispy and the green beans are tender.

Step 4: Garnish and Serve

  1. Remove from the oven and sprinkle with fresh herbs, grated Parmesan, or lemon zest if desired.

  2. Serve warm as a flavorful side dish or light main course.

Notes

Cut Evenly – Make sure your potatoes are similar in size for even roasting.
Don’t Overcrowd the Pan – Spread out the veggies for maximum crispiness.
