  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces chicken sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with salt and pepper until softened (3–4 minutes).
  3. Add minced garlic and Italian seasoning; sauté for 30 seconds, then stir in tomato paste for another minute.
  4. Cook crumbled chicken sausage until browned (5–7 minutes).
  5. Stir in chicken broth, crushed tomatoes, and ravioli; season to taste.
  6. Bring to a simmer, reduce heat to low, and cook until ravioli are al dente (3–5 minutes).
  7. Mix in chopped spinach and heavy cream; heat through.
  8. Taste and adjust seasoning; garnish with Parmesan and parsley before serving.
