For the Roasted Cauliflower Base:

  • 1 large head cauliflower, cut into florets

  • 2 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp Italian seasoning

For the Pizza Sauce Layer:

  • 1 cup marinara or pizza sauce (low-sugar preferred)

  • 1/2 tsp dried oregano

  • 1/2 tsp basil

  • 1/4 tsp red pepper flakes (optional for heat)

For the Toppings:

  • 1 1/2 cups shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 cup sliced black olives

  • 1/2 cup sliced mushrooms

  • 1/2 cup chopped bell peppers

  • 1/2 cup cooked beef sausage or ground chicken

  • 1/4 cup red onion, thinly sliced

  • Fresh basil or parsley, for garnish


Instructions

Step 1: Roast the Cauliflower

  1. Preheat oven to 425°F (220°C).

  2. Toss cauliflower florets in olive oil, salt, pepper, garlic powder, and Italian seasoning.

  3. Spread on a baking sheet in a single layer.

  4. Roast for 20-25 minutes until golden and tender, stirring halfway.

  5. Remove and set aside.

Step 2: Prepare the Sauce and Toppings

  1. In a small bowl, combine marinara sauce with oregano, basil, and red pepper flakes.

  2. If using raw meats or toppings like mushrooms and onions, lightly sauté them until tender.

Step 3: Assemble the Casserole

  1. Lower oven temperature to 375°F (190°C).

  2. Lightly grease a 9×13-inch casserole dish.

  3. Layer roasted cauliflower evenly across the bottom.

  4. Pour the seasoned pizza sauce over the cauliflower.

  5. Sprinkle half of the mozzarella and all the Parmesan cheese.

  6. Add prepared toppings: mushrooms, olives, peppers, onions, and cooked sausage.

  7. Top with the remaining mozzarella cheese.

Step 4: Bake the Casserole

  1. Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly.

  2. Broil for an additional 2-3 minutes for a golden, slightly crispy top.

  3. Remove from oven and let rest for 5 minutes.

Step 5: Garnish and Serve

 

  1. Sprinkle chopped fresh basil or parsley over the top.

  2. Slice and serve hot—just like your favorite deep-dish pizza!
