  • 2 heads of garlic
  • 2 teaspoons olive oil
  • 8 tablespoons softened butter
  • 1 tablespoon parsley
  • ½ teaspoon salt
  • 8 slices white artisan bread (ciabatta or sourdough)
  • 1 large tomato (thinly sliced)
  • 1 cup grated Gruyere cheese
  • 1 cup grated mozzarella cheese
  • 8 slices crispy turkey turkey bacon

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the tops off the garlic heads and drizzle with olive oil. Wrap in aluminum foil and bake for 30–40 minutes until soft.
  2. Let the roasted garlic cool slightly, then squeeze the cloves into a bowl. Mix with softened butter, parsley, and salt until combined.
  3. Spread the garlic mixture on one side of each slice of artisan bread. On half of these slices, layer sliced tomatoes followed by Gruyere and mozzarella cheeses, then top with crispy turkey turkey bacon.
  4. Close the sandwiches with the remaining slices of bread.
  5. Heat a skillet over medium heat and grill each sandwich until golden brown on both sides and cheese is melted (about 3–4 minutes per side).
  6. Allow to cool slightly before slicing and serve warm.
