For the Potatoes:

  • 2 lbs baby potatoes, halved (or quartered if large)

  • 2 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp dried oregano

  • ½ tsp paprika (optional, for a hint of warmth)

For the Feta & Garlic:

  • 1 block (7 oz) feta cheese, whole

  • 1 tbsp olive oil

  • 56 garlic cloves, peeled

  • ½ tsp chili flakes (optional, for heat)

  • 1 tsp honey (balances the saltiness of the feta)

For Garnish & Serving:

  • 2 tbsp fresh parsley, chopped

  • Zest of 1 lemon (optional)

  • Lemon wedges on the side

  • Crusty bread (optional, for serving)


Instructions

Step 1: Roast the Potatoes

  1. Preheat your oven to 425°F (220°C).

  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, black pepper, oregano, and paprika.

  3. Spread them in a single layer on a large baking sheet, cut side down for maximum crispiness.

  4. Roast for 25–30 minutes, flipping halfway, until golden brown and crispy on the edges.

Step 2: Bake the Feta & Garlic
5. While the potatoes roast, place the block of feta in a small oven-safe dish.
6. Drizzle with olive oil, scatter garlic cloves around the cheese, and sprinkle with chili flakes and honey.
7. Place in the oven during the last 15 minutes of the potato roasting time.
8. Bake until the feta is golden and soft, and garlic is caramelized.

Step 3: Combine & Finish
9. Once both the potatoes and feta are done, transfer the roasted potatoes to a large serving bowl or platter.
10. Add the baked feta and roasted garlic, using a fork to slightly mash and mix them together.
11. Gently toss to coat the potatoes with creamy feta and garlicky goodness.

 

Step 4: Garnish & Serve
12. Sprinkle fresh parsley and lemon zest over the dish for a burst of freshness.
13. Serve with lemon wedges on the side and crusty bread to scoop up any cheesy bits.
