  • 1 pound ground turkey sausage
  • 12 ounces penne pasta (cooked and drained)
  • ½ yellow onion (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 2 cans (10 oz each) Rotel tomatoes (undrained)
  • 16 ounces Velveeta cheese (cubed)
  • ½ cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, brown the ground beef and turkey sausage, adding in the diced onion and bell peppers until the meat is fully cooked. Drain excess grease.
  3. Stir in the undrained Rotel tomatoes, milk, and cubed Velveeta cheese until well combined. Cover to help melt the cheese.
  4. Once melted, add the cooked pasta and mix well.
  5. Serve warm, garnished with fresh cilantro or jalapeños if desired.
