  • 15 ounces canned salmon (drained and deboned)
  • 3/4 cup crushed saltine crackers
  • 2 teaspoons minced garlic
  • 1 egg
  • ¼ teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon Old Bay seasoning
  • ½ tablespoon Italian seasoning
  • Vegetable oil for frying
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. In a large mixing bowl, combine canned salmon, crushed saltines, minced garlic, egg, pepper, salt, onion powder, Old Bay seasoning, and Italian seasoning. Mix thoroughly.
  2. Cover the mixture with plastic wrap and refrigerate for about 20 minutes to help bind the ingredients.
  3. After chilling, form the mixture into even-sized patties (about 2 inches wide and ½ inch thick).
  4. In a heavy-bottomed skillet over medium-high heat, add enough vegetable oil to come halfway up the sides of the patties. Heat until hot but not smoking.
  5. Carefully add the patties to the hot oil and fry each side for about 3-4 minutes or until golden brown. Avoid overcrowding; fry in batches if necessary.
  6. Transfer cooked patties to a paper towel-lined plate to drain excess oil. Serve warm with parsley garnish and lemon wedges.
