  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 4 cups packed baby spinach leaves
  • 24 ounces cream cheese, softened
  • ¼ cup Parmesan cheese
  • 4 salmon fillets (6 ounces each), skin removed
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, melt the butter and sauté the diced onion until translucent. Add minced garlic and cook for another minute.
  3. Stir in spinach and cook until wilted. Remove from heat, then mix with cream cheese and Parmesan until well combined.
  4. Roll out the puff pastry on a floured surface and spread the spinach mixture in the center. Place salmon fillets on top and fold the pastry over to encase them completely.
