  • 500 grams calamari or squid
  • 400 grams prawns
  • 2 medium-sized eggplants
  • Extra virgin olive oil (EVOO)
  • ¼ onion (chopped)
  • ½ glass white grape juice
  • 1 kg good quality basil pasta sauce
  • Fresh parsley (chopped finely)
  • 450 grams provolone cheese (cut into small cubes)

Instructions

  1. Prepare the seafood by cutting calamari into small pieces and chopping prawns into chunks.
  2. Slice eggplants thinly, salt them to draw out moisture, and let them drain in a colander.
  3. Cook the seafood mixture by sautéing onions in olive oil, adding calamari, then deglazing with white grape juice before mixing in basil sauce.
  4. Fry the drained eggplant slices until golden brown in heated sunflower oil.
  5. Assemble the dish by layering seafood sauce, fried eggplant, and cheese in a baking tray.
