  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 cup freshly grated parmesan cheese
  • 10 oz ricotta cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 1 large egg (whisked)
  • 1 pound seafood mix (shrimp, crab, etc.)
  • 1 teaspoon olive oil
  • 1/2 lb lasagna noodles (fresh)

Instructions

  1. Preheat oven to 180C/350F and grease a baking dish.
  2. In a saucepan over medium heat, melt butter, whisk in flour for one minute. Gradually add milk and stir until thickened. Remove from heat and mix in parmesan.
  3. In a bowl, combine ricotta cheese, whisked egg, and parsley; blend until smooth.
  4. Heat olive oil in a skillet over medium heat, sauté seafood mix with salt, pepper, and parsley for about three minutes.
  5. In the baking dish, layer bechamel sauce, lasagna sheets, ricotta mixture, seafood mix, and repeat layers two more times. Top with mozzarella.
  6. Bake for 35 minutes until bubbly and golden. Let cool for several minutes before serving.
