  • 3 tbsp butter
  • 1 lb small shrimp
  • 6 oz crab meat
  • 1 cup chopped carrots
  • 1 large celery stick (chopped)
  • 1 shallot (minced)
  • 3 sprigs of thyme
  • 1/2 tsp cayenne pepper
  • 5 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 4 tbsp flour
  • 1/2 cup peas
  • 1/2 cup corn
  • 3 cups seafood stock
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • Cheddar Bay biscuits (Red Lobster)

Instructions

  1. In a large pot over medium-low heat, melt the butter and sauté the shrimp until just cooked through, about 3–4 minutes. Remove from heat and set aside.
  2. Sauté the minced shallot, chopped carrots, chopped celery, thyme sprigs, and cayenne pepper for about 3–4 minutes until softened. Add garlic and cook for an additional 2 minutes.
  3. Stir in tomato paste and flour to form a paste, then add peas and corn.
  4. Pour in seafood stock and chicken stock; let simmer for about 15 minutes until thickened.
  5. Stir in heavy cream and cooked seafood mixture.
  6. Preheat oven to 375°F. Fill ramekins with the mixture and top with prepared Cheddar Bay biscuit dough.
  7. Bake for about 15–17 minutes or until tops are golden brown.
