  • 1 bay leaf
  • 1 teaspoon Creole seasoning
  • 1 tablespoon bouillon powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon white pepper
  • 1 tablespoon fresh lemon juice
  • 1 pound crab meat
  • 1 cup heavy cream
  • Kosher salt to taste

Instructions

  1. Sauté the onion, garlic, and celery in melted butter and olive oil until softened.
  2. Deglaze the pan with dry apple juice; cook until reduced.
  3. Add flour to create a paste; sauté briefly.
  4. Whisk in seafood stock along with seasonings and bring to a boil.
  5. Simmer until slightly thickened.
  6. Stir in lemon juice, heavy cream, and half of the crab meat; simmer until thickened.
  7. Serve topped with remaining crab meat and garnish with fresh herbs.
