Ingredients
For the Casserole:
-
2 cans (11 oz each) shoepeg corn, drained
-
1 can (15 oz) French-style green beans, drained
-
1 can (10.5 oz) cream of mushroom soup
-
1 cup sour cream
-
½ cup chopped celery
-
½ cup chopped onion
-
1½ cups shredded sharp cheddar cheese
-
1 tsp salt
-
½ tsp black pepper
For the Topping:
-
1 cup buttery cracker crumbs (like Ritz)
-
4 tbsp unsalted butter, melted
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish with nonstick spray or butter and set aside.
Step 2: Sauté the Vegetables
In a medium skillet over medium heat, sauté the chopped celery and onion in a small amount of butter or oil until softened, about 5 minutes.
This step brings out their natural sweetness and adds more flavor to the casserole.
Step 3: Mix the Casserole Base
In a large mixing bowl, combine the drained shoepeg corn, green beans, sautéed celery and onion, cream of mushroom soup, sour cream, shredded cheddar cheese, salt, and pepper.
Stir until everything is evenly combined.
Step 4: Assemble the Casserole
Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula.
Step 5: Add the Topping
In a small bowl, mix the buttery cracker crumbs with the melted butter until well coated.
Sprinkle the cracker mixture evenly over the top of the casserole.
Step 6: Bake the Casserole
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the filling is hot and bubbly.
Step 7: Serve and Enjoy
Let the casserole cool for about 5 minutes before serving.
Spoon it onto plates and enjoy the creamy, comforting goodness!
Notes
Drain the Vegetables Well – Excess liquid can make the casserole watery.
Use Freshly Grated Cheese – It melts more smoothly than pre-shredded cheese.
Customize It – Add cooked chicken, turkey, or extra veggies like mushrooms or bell peppers.
Make It Ahead – Assemble the casserole up to a day in advance and bake when needed.
