- 2 bell peppers (diced)

- 6 large flour tortillas
- Seasonings: chili powder, cumin, smoked paprika, salt, garlic powder, onion powder
Instructions
- Sauté the vegetables by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add diced onion and bell peppers; cook until softened (8–10 minutes).
- Combine shredded chicken with seasonings and ¼ cup water in the skillet. Stir well and cook until thickened (3–4 minutes). Transfer to a bowl.
- To assemble quesadillas, heat remaining olive oil in the skillet. Place one tortilla down; sprinkle cheese on half, add some chicken mixture, top with more cheese, then fold over.
- Cook until golden brown and crispy on both sides. Repeat with remaining tortillas.
