Ingredients
For the Soup:

1 lb raw shrimp, peeled and deveined

2 tbsp olive oil or butter

1 small onion, diced

2 cloves garlic, minced

2 ribs celery, chopped

1 large carrot, diced
-
2 medium potatoes, peeled and cubed

2 cups corn kernels (fresh, frozen, or canned)

1 tsp smoked paprika
-
½ tsp dried thyme
-
½ tsp salt
-
¼ tsp black pepper

4 cups low-sodium chicken or vegetable broth
-
1 cup milk
-
½ cup heavy cream
-
Juice of ½ lemon
-
2 tbsp fresh parsley or chives, chopped
Optional Add-Ins:

¼ tsp cayenne pepper for a little heat

½ cup diced red bell pepper

½ cup cooked beef bacon or sausage crumbles

Instructions
Step 1: Sauté the Aromatics

In a large soup pot, heat olive oil over medium heat.

Add onion, garlic, celery, and carrot. Cook for 4–5 minutes, until softened.

Stir in paprika, thyme, salt, and pepper.
Step 2: Add Potatoes and Broth
4. Add cubed potatoes to the pot.
5. Pour in the broth and bring to a boil.
6. Reduce heat and simmer for 10–12 minutes until potatoes are fork-tender.
Step 3: Add Corn and Shrimp
7. Stir in corn and shrimp.
8. Simmer for 4–5 minutes until shrimp turn pink and opaque.
Step 4: Finish with Cream and Lemon
9. Stir in milk and heavy cream.
10. Add lemon juice and adjust seasoning to taste.
11. Let the soup heat through, but do not boil once the cream is added.
Step 5: Serve & Garnish
12. Ladle soup into bowls.
13. Garnish with fresh herbs and serve with bread or crackers.
Notes
Use Raw Shrimp – They cook quickly and stay tender.
Don’t Overcook Shrimp – Remove from heat once they’re just pink.
Add Corn Last – Especially if using canned or frozen to avoid overcooking.
Taste & Adjust – Add more lemon, salt, or cream as needed for balance.
