  • 2 pounds shrimp (peeled and deveined)
  • 8 ounces smoked turkey sausage
  • 1 medium onion (diced)
  • 2 teaspoons garlic (minced)
  • 2 stalks celery (chopped)
  • 1 medium green bell pepper (diced)
  • 56 cups shrimp or chicken stock
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • Creole seasoning, bay leaves, thyme, gumbo file, smoked paprika

Instructions

  1. In a large pot or Dutch oven, heat canola oil and melt butter. Gradually stir in flour to create a roux. Cook until deep brown, about 20–30 minutes.
  2. Add diced onion, minced garlic, chopped celery, and green bell pepper; sauté until tender (5–7 minutes).
  3. Stir in Creole seasoning, bay leaves, thyme, turkey sausage, salt, pepper, gumbo file, smoked paprika, and chicken bouillon.
  4. Gradually add the stock while stirring to prevent lumps. Bring to a boil then reduce heat to low. Simmer uncovered for 45 minutes.
  5. Add shrimp and cook until pink (5–7 minutes). Adjust seasoning as needed before serving.
