- 8 ounces smoked turkey sausage
- 1 medium onion (diced)
- 2 teaspoons garlic (minced)
- 2 stalks celery (chopped)
- 1 medium green bell pepper (diced)
- 5–6 cups shrimp or chicken stock
- ¼ cup unsalted butter
- ¼ cup all-purpose flour
- Creole seasoning, bay leaves, thyme, gumbo file, smoked paprika
Instructions
- In a large pot or Dutch oven, heat canola oil and melt butter. Gradually stir in flour to create a roux. Cook until deep brown, about 20–30 minutes.
- Add diced onion, minced garlic, chopped celery, and green bell pepper; sauté until tender (5–7 minutes).
- Stir in Creole seasoning, bay leaves, thyme, turkey sausage, salt, pepper, gumbo file, smoked paprika, and chicken bouillon.
- Gradually add the stock while stirring to prevent lumps. Bring to a boil then reduce heat to low. Simmer uncovered for 45 minutes.
- Add shrimp and cook until pink (5–7 minutes). Adjust seasoning as needed before serving.
