  • 1 pound medium shrimp (peeled and cleaned)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 10 jalapenos (halved and cleaned)
  • 8 oz cream cheese (softened)
  • 4 oz sharp cheddar cheese (grated)
  • ½ cup breadcrumbs (for topping)

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine shrimp, olive oil, chili powder, garlic powder, cumin, salt, and pepper; stir well.
  3. Heat a skillet over medium-high heat and cook the shrimp mixture for about 2-3 minutes on each side until cooked through; chop roughly.
  4. In the same bowl, mix chopped shrimp with cream cheese and cheddar until blended.
  5. Halve jalapenos lengthwise and remove seeds if desired.
  6. Fill each jalapeno half with the shrimp mixture and top with breadcrumbs.
  7. Place stuffed jalapenos on a baking sheet and bake for 20-25 minutes until golden brown.
